Ingredients:
15 ounces of your choice of cheese shredded – (we used a mix of Mexican Queso and Monterey Jack)
10 ounces of chorizo – spicy or mild
1/4 cup diced yellow onion
2 tbsp cilantro
1 tbsp Cajun Seasoning
1 tsp olive oil
Directions:
Preheat oven to 375 degrees Fahrenheit.
In a separate bowl add the cheeses and the cajun seasoning and mix well, set aside.
Add olive oil to a cast iron skillet once the skillet is hot add the onions. When the onions are translucent add the chorizo. Cook for 5/6 minutes, once cooked drain the mixture.
Place the chorizo and onion mixture back into the skillet and top with all the cheese.
Bake the skillet for 12/15 minutes or until melted. (please be careful pulling the skillet out of the oven it is very hot).
Garnish with the cilantro and serve warm!
