Easy Curry Chicken Stew in the Insta Pot!
1/2 Onion Chopped
2 Tbsp Garlic
6 Cups Chicken Stock
1 1/2 Cups Orange Lentils
2 Bay Leaves
2 Chicken Breasts
2 Tbsp Curry Powder
2/3 Cups Veggies of choice or whatever you have on hand in the fridge
1/4 Cup Cilantro
1 Cup unsweetened Coconut Milk
1 Medium Potato chopped up
Salt & Pepper to taste
Turn your Insta Pot to Sauté.
Add your onions and garlic and cook down for 4/5 minutes.
Add in the rest of your ingredients! Pressure cook on medium for 60 minutes.
Cook up some quinoa, pastina or rice to serve with your curry stew!
