Red Pepper Cauliflower Mash

Ingredients:

Cauliflower – 1 Medium Head cut into 4

Roasted Red Peppers – 1/4 Cup

Sour Cream – 1/2 Cup

Butter – 2 tablespoons

Almond Milk – 1/2 Cup

Fresh Garlic – 2 teaspoons minced

Garlic Powder – 1 teaspoon

Onion Powder – 1 teaspoon

Salt – 1/2 teaspoon

Pepper – 1/2 teaspoon

Olive Oil – 1 teaspoon



Directions:


Bring 6 cups of salted water to a boil. Add your cauliflower. Cook for about 8/10 mins or until tender. Drain and set aside.


Using a blender or an emersion hand blender your going to combine all your ingredients and blend until you have a smooth consistency. If the consistency is thick add a touch more almond milk and blend until smooth for about 3/5mins Serve hot or warm.


You could also refrigerate your left over mash for the following day. Just add the mixture to a microwave safe plate or bowl and heat for 45 seconds or until hot.
