Citrus & Herb Marinated Pork Loin



It seems like Pork Loin is the way to go in my family these day. Its so easy to prepare and full of flavor and it doesn't take a long time to cook. Its perfect for busy families on the go!


Ingredients:

2 pork loins

olive oil

Garlic cloves (I leave how many up to you because I love garlic and add a lot)

4/6 Baby tomatoes, cut in half

4/6 Lemon slices

1 tablespoons lemon juice

1/2 cup parsley

1/4 cup cilantro

1/4 cup white wine

1 tablespoon apple cider vinegar

1 teaspoon crushed black pepper

1 teaspoon salt

1 tablespoon butter

large zip lock bag



Directions:


Add your pork loins, 1 tablespoon olive oil, 4/6 cloves crushed garlic (I use the back on my knife and give it a good smack to crush the garlic), 1 tablespoon lemon juice, parsley, cilantro, white wine, apple cider vinegar, pepper and salt into your zip lock bag. You want to make sure you get that pork loin covered by giving it a good massage while in the bag. Place in the fridge for at least an hour or you could also let it sit over night. The more it sits the better it will be!


Preheat oven to 400 degrees.


Take a medium/large pan heat 1 tablespoon of olive oil.


Once the oil is hot add you're pork loins, discard the rest of what's left in the bag.


Brown your loins on all sides evenly.


Remove the pork loins and place them on a foil lined baking sheet and set aside.


In the same pan add 1/2 tablespoon of olive oil and let heat.


Add 4/6 cloves of whole garlic let cook for 1 minute then add your butter let melt add your tomato halves & lemon slices. You want them to brown on each side about 2/3 minutes.


Remove the lemon slices, tomatoes and garlic and pour the juices over the pork loins. Top the loin with the lemon slices and surround them with the tomatoes and garlic.


Cook for approximately 18/22 minutes or until your thermometer reads 145 F


Remember to let rest your meat rest for 5 minutes before cutting.

I found these pork loins at Aldi! They are the best price around and they are usually not on sale. These were $5.49 each!

You can also pick up some great produce there as well so if you don't find any of these herbs I have listed just pick up something they do have, herbs just give it flavor so don't worry maybe try rosemary or thyme.
