Sofrito "The Portuguese Way"

Ingredients:

1 onion, chopped

8 garlic cloves, roughly chopped

2 plum tomatoes, chopped

2 bay leaves

1/4 teaspoon crushed red pepper flakes

2 green bell peppers, chopped

2 cubanelle peppers, chopped

1/2 red pepper, chopped

1/2 teaspoon oregano

1/2 teaspoon cumin

1 1/2 cups cilantro

1/2 cup parsley

1/4 cup olive oil

salt to taste



Directions:


Place all the ingredients into a food processor and blend until you reach the consistency of your choice. You can either do chunky or smooth. I prefer mine on the chunky side but not to chunky.
