Portuguese Baked Drumsticks


Ingredients:

2lbs chicken drumsticks

1 teaspoon cumin

1 teaspoon dried oregano

1 teaspoon dried parsley

1 teaspoon turmeric

1 teaspoon sea salt

1/2 teaspoon coriander

1/2 teaspoon crushed black pepper

1/2 teaspoon cayenne pepper

1/4 cup lime juice

2 tablespoons olive oil

6 cloves garlic, minced

1/4 cup coconut aminos

Directions:


Preheat oven to 375 degrees


In a medium bowl, combine all of the ingredients for the marinade and mix, set aside.


Place the chicken in a Ziplock bag and add the marinade. Let sit for at least 3 hours or overnight in the fridge.


Line a large sheet pan with tin foil then transfer the drumsticks and all of the marinade to the pan.


Bake uncovered a for 45/50 minutes, until the internal temperature reaches 180F and the drumsticks are browned.
