Low Carb Banana Bread Muffins


1 medium ripe banana

2 egg yolks

2 large eggs

1 tsp vanilla

1/2 cup of melted butter

1/4 cup flax meal

3/4 cup almond flour

1/4 tsp of salt

1/2 cup lakanta

1 tsp baking powder, aluminum free


Preheat the oven to 350 degrees.

Grease your muffin tins or loaf pan with non stick cooking spray.

In a large bowl, mash the banana with a fork then add in the eggs yolks, eggs, vanilla and melted butter, stir until combined.

In a separate bowl, combine the flax meal, almond flour, salt, lakanta, and baking powder. Stir until mixed well.

Gradually combine the dry ingredients to the wet ingredients, stirring after adding each scoop, until they are well combined.

Transfer the batter to the muffin tins or loaf pan, and bake for 20 minutes for muffins and 30 minutes for a loaf pan.
