2 lbs sweet potatoes, cut into wedges

1 red chili, thinly sliced
1 vanilla bean, cut lengthwise in half and scrape seeds
1 teaspoon sea salt
1 teaspoon crushed black pepper
Heat oven to 400 degrees.
In a large bowl add all your ingredients and give it a good stir to make sure all is incorporated.
Transfer to a large baking sheet and roast until tender about 45/50 minutes.
Transfer to a dish and serve!
