Spicy Deviled Egg Salad
These aren't too spicy but if your looking for something with no spice at all just swap out the Tajin for some smoked paprika! :)
12 hard boiled eggs
1/2 cup mayo, if you like it really wet you can add a little more
1 tablespoon dijon mustard
1/2 cup red onions, diced thin
2 tablespoons fresh chives, sliced thin
1/4 teaspoon salt
1/2 teaspoon crushed black pepper
1/4 teaspoon Tajin, this Tajin is not easy to find so I connected the link to my amazon store here if needed.
5 slices of bacon, chopped
1/4 cup fresh chives, sliced thin
In a medium pot add your eggs and cover with cold water, place pot on the stove and bring to a boil. Turn off the heat and cover. Let sit for 12 minutes.
Remove the eggs from the pot and transfer to a bowl of ice water, let cool for a few minutes before peeling your eggs.
Once your eggs are all peeled start chopping them and place them in a large bowl.
Add all the ingredients to your eggs and stir, make sure you combine the ingredients well.
Place in the fridge until you're ready to serve
Top with chopped bacon & fresh chives before servings
