Roasted Tomatillo Salmon



Ingredients:

2lb Salmon

1 1/2 pounds tomatillos, husked, rinsed and sliced into 1/2 inch rounds

2 tablespoons olive oil

2 cups sliced red onions

1 lemon, cut into thin slices

1 tablespoon chopped fresh cilantro

1 tablespoon chopped fresh chives

1/2 teaspoon sea salt

1/2 teaspoon crushed black pepper



Directions:


Preheat oven to 375 degrees


Line a baking sheet with parchment paper.


In a medium size bowl add your tomatillos, red onions, olive oil, salt & pepper. Make sure you mix everything together well. You want everything to get seasoned evenly.


Spread everything from the bowl onto the baking sheet and top with the salmon.


Season the salmon with salt and pepper as per your taste, top with lemon slices, chopped chives & cilantro.


Roast in the oven for 30/35 minutes.


Transfer the salmon to a serving platter and cover lightly with tin foil. Return the tomatillo and onion mix to the oven and continue to roast for an additonal 5 minutes.


Remove and serve the tomatillos and onions along side the salmon.
