Ingredients for Wontons:
• 1 pound shrimp, peeled and deveined
• 8 ounces of ground pork
• 1/2 Cup mixed bean packet - flavor - you don't need to add beans just skip this step, I add beans to give it more flavor and it adds a nice velvety texture to the broth. I get a mix of beans but I only add like 1/2 cup or so.. give or take. This step is preference for sure.
• 4 Tbsp Ginger Paste
• 5 Green Onions, chopped
• 2 Tbsp Garlic, minced or paste
• Wonton Wrappers
• 3 Tbsp Soy Sauce
• 3 Tsp Rice Wine
• 2 Tsp Sesame Oil
• Salt & Pepper to taste
• Flour for dusting plate
• 1 egg, beaten
• 1 tsp Sprite or any carbonated drink
Direction for Wontons:
In a food processor add half of the shrimp, ground pork, soy sauce, rice wine, sesame oil, 1 tbsp garlic, salt & pepper. You want it to go about 2 minutes or so until it looks like a paste, set aside.
You're going to roughly chop the rest of the shrimp and add to a medium size bowl.
Add in your green onions, the rest of the garlic and the shrimp paste mixture.
Now beat 1 egg with 1 tsp of Sprite or any carbonated drink.
You're going to add a teaspoon full of filling to the wonton wrapper and use your fingers to brush a little of the egg mixture on the corners of the wonton and gently close. Please watch the video on how too. It’s super easy..
Your going to sprinkle a little flour on a plate before placing your wontons on it so that it doesn’t stick.
Now get your stock going!!
Ingredients for Broth:
• 8 Cups Chicken Broth
• 2 Tbsp Butter
• 1 Small Packet of Mixed Beans - just got flavor can be removed
• 2 Tbsp Garlic, minced of crushed
• 1/2 Small Onion, diced
• Two Handfuls of Spinach
• Crushed Black Pepper to Taste
• 1 Tbsp Ginger paste
You can make this as easy or as hard as you would like.
I usual boiled chicken stock and keep it in my freezer but not this time.
Start by adding your butter to your pot or insta pot, now add your beans, onions, garlic and ginger. Once brown pour in your stock. Once it comes to a boil lower it to medium and cook for about 35 minutes or in the crockpot pot just close set to pressure cook medium for 15 minutes. Set aside when done.
If you make this in an Insta-pot once it’s done pour it into a regular stock pot.
Ingredients for Mini Meatballs
• 1 Pound Ground Beef - 80/20
• Garlic Powder
• Onion Powder
• Italian Seasoning
• 2 Eggs
• 1/2 Cup Bread Crumbs of choice, if the mix is too wet add a little more.
Put all the ingredients in a bowl and give it a good mix.
Roll into small balls and set aside.
NOW pump up your heat on your stock once is to a simmer add your meatballs. Cook them for about 8/10 minutes. Remove and set aside.
Now add your wontons but add them in batches of maybe 10 at a time. Your going to cook them for about 5/7 minutes.
They will float to the top and that is normal. Remove and set aside and add about 1 scoop of stock to them so they don’t stick.
Now add the spinach to your stock and shut off the heat on your stock. Give it a good turn.
Add your meatballs to the stock so they can warm up..
Bowl, add a few wontons, add stock with some meatballs and let’s eat!!!
