Peanut Butter Chocolate Dipped Cookies



Ingredients for cookies:

2 cups unsweetened peanut butter

2 eggs

1 cup sweetener, I use Lakanto

2 teaspoons vanilla extract


Ingredients for chocolate:

1/2 cup milk Choczero chips

Directions:


Preheat oven to 350 degrees.


Line a baking sheet with parchment paper and set aside.


In a large bowl add all the ingredients and mix well.


You could us an ice cream scooper or your hands to grab the dough.


Roll the dough into balls and place them on the baking sheet, make sure the cookies are not touching.


I didn't use a fork to give them that pretty look but you can! Just take your fork and press down creating a criss-cross pattern.


Bake for 10/12 minutes or until the cookies are a golden brown.


Remove the cookies from oven and let cool.


Now let's get started on the chocolate!


In a medium sauce pan add two cups of water and put on high heat until water starts to boil


In a metal bowl add your chocolate chips and place that medal bowl directly on top of the sauce pan. Your chips will start to melt so start whisking!


Once melted you will dip each one of your cookies in the chocolate and then place them on a cooling rack so your chocolate can dry.
