Low Carb/Keto Snickerdoodle Cookies

Ingredients:

4 ounces cream cheese softened

1/4 cup butter softened

1/4 cup granulated sugar (Lakanto

1/4 cup brown sugar (Swerve)

2 eggs

1/2 cup coconut flour

1 teaspoon cream of tartar

1/2 teaspoon vanilla

1/2 teaspoon baking soda 1/4 teaspoon of salt Cookie Topping: 2 tablespoons lakanto sugar 2 teaspoons cinnamon Directions: Preheat oven to 350 degrees In a Mixer or large bowl beat the cream cheese and butter until smooth then add the sweaters, eggs, vanilla and mix again until smooth. Add the flour, cream of tartar, baking soda and salt to the wet mixture and beat until the dough starts to form. Let the dough rest for about 10/15 minutes. In a small bowl stir together the sweetener and cinnamon for the topping. Line a baking sheet with parchment paper. Take a small spoon to grab the dough and roll into a ball. Roll each cookie ball in the topping to coat. Place each cookie on the lined cookie sheet and lightly flatten with your fingers. Bake for 15 to 20 minutes or until firm to the touch.
