Keto/Low Carb Swedish Meatballs



Ingredients for meatballs:

2lb ground beef 80/20

1 egg

3/4 cloves garlic, minced or crushed

1/2 medium white, puree

2 tablespoons fresh parsley, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon black pepper

1 teaspoon sea salt




Ingredients for sauce:

3 tablespoons olive oil

1/2 cup white onions, minced

2 cups chicken or beef broth

3 tablespoons arrowroot

1 cup coconut milk, unsweetened

1 teaspoon Dijon mustard

1 teaspoon crushed black pepper

1 teaspoon salt

1 tablespoon coconut aminos




Directions for the meatballs:


Preheat oven to 350 degrees.


In a large bowl add you're 80/20 meat, egg, crushed garlic, onion puree, parsley, garlic powder, onion powder, pepper and salt and mix well.


Spray a large sheet pan with coconut spray and set aside.


You can use an ice cream scooper to scoop out your meat or by hand and roll into a medium size ball and add to your sheet pan.


Bake for 25 minutes.


Transfer meatballs from the sheet pan to a large deep dish and set aside.




Directions for the Sauce:


In a medium size skillet over medium/low heat add your olive oil. Once the olive oil is hot add your onions and cook for 2 minutes, then add the arrow root and stir well to combine.


Slowly start adding in your beef or chicken broth whisking the entire time so everything breaks up.


Increase the heat to medium and add in your coconut milk, dijon mustard, salt, pepper and the liquid coconut aminos and cook for 3/5 minutes or until the sauce gets thicks.


Pour sauce over the meatballs and put back into the oven for 10 minutes.
