Tomato Herb Vinaigrette


1 small shallot, sliced thin

3 garlic cloves, minced

1/4 cup basil, torn

1/4 cup parsley, torn

1/4 cup chives, chopped

1 tablespoon fresh tarragon

1 pound tomatoes halved, you can use large tomatoes but make sure to cut them into 1 1/2 inch pieces

1/4 cup sherry vinegar

3/4 cup olive oil

1/2 teaspoon sea salt

1/2 teaspoon crushed black pepper


You're going to need a 16 ounce mason jar or something that size with a tight fitting lid.

Add your shallot, garlic, herbs, salt, pepper and tomatoes.

Add vinegar & oil and shake vigorously.
