Herb Encrusted Pork Loin


2.5lb Pork Loin (I used 2 because one wouldn't feed a family of 6)

1 teaspoon sea salt

1 teaspoon crushed black pepper

2 tablespoons Italian seasoning (your can find this mix at Walmart)

6 cloves of garlic, minced

3 tablespoons olive oil

2/3 tablespoons dijon mustard (this all depends on hoe big your loins are, just make sure they are covered in the mustard)

1/4 cup fresh cilantro


Preheat oven to 375.

Take your pork tenderloins and give them a rinse under cold water, than place them on a baking pan and pat them dry.

Cover your loins with the mustard and set aside.

In a small bowl add your sea salt, back pepper, Italian seasonings, garlic and olive oil, give it a good mix.

Your going to cover the loin in the spice mix directly on top of the mustard, make sure you get it all over, seasoning is so important! Top with cilantro and into the oven it goes!

Roast the loin for about 25/30 minutes or until done, internal temp should read 145/150.

Remove from oven and let rest for 5 minutes or so.

Your ready to slice!
