Ingredients:
2- 29 ounce cans corn
2 Tbsp Lime Juice
1/2 Cup Cilantro
3/4 Cup Mayo - if you want it more on the wen side add another 1/4 cup
3/4 Cup Cotija Cheese
2 Tbsp Garlic - minced or crushed
1/2 Tsp Salt
1/2 Tsp Pepper
1 Tsp Chili Powder
1 Tsp Onion Powder
1/4 Cup Cilantro
1 Tbsp Olive Oil
Directions:
In a large skillet heat 1 tbsp of olive oil, once hot add your garlic and sauté for 1/2 minutes and then add your corn and stir.
Add your seasonings, lime juice, mayo, cilantro and stir to incorporate all of the ingredients.
Now it's time for the best part!!! Add the Cotija cheese!!! Don't over mix.
