• Egg Roll Wrappers - 2 Packs
• 1 1/2 lbs Ground Pork
• 1/2 pound Shrimp - minced
• 5 ounces mushrooms - minced
• 1 White Onion - minced
• 2 Tbsp Garlic - minced or crushed
• 2 Eggs Yolks - saved the egg whites to seal your egg rolls later.
• 1/2 Tbsp Sea Salt
• 1 Tbsp Black Pepper
• 1 Tbsp Lakanto
• 1 Tbsp Sesame Oil
• 4 Tsp Fish Sauce
• Oil for frying
Start by cutting your onions and mushrooms and set aside.
In a medium size pan fill half way with oil (you want the egg rolls to be a little more than half way covered in oil when frying) and heat on medium/high to 275 degrees, about 5/6 mins.
In a medium size bowl add your pork, shrimp, mushrooms, onions, garlic, egg yolks, salt, pepper, lakanto, sesame oil & fish sauce. Give it a good mix!!!
Now grab those egg roll wrappers and place them in a diamond shaped and fold up the bottom point of the wrapper (watch video) now add about 1 1/2 soul spoons of your mix.
Now fold over the right diamond and left diamond until it touches, now roll the egg roll about an inch or so from the top.
Now with your finger tip dip into egg whites and go over the last diamond tip on top and than finish rolling. This helps the egg roll stay securely closed! Watch the video I will show you how to do it.
Now it’s time to fry!!!!
You are going to fry each egg roll for 5 mins on each side. If your oil is to hot just lower the temperature.
