Ingredients:
• 3lb Short Ribs
• 4 Cups Beef Stock
• 2 Cups Red Wine
• 2 Tbsp Garlic - minced or crushed
• 1/2 Cup Onions - chopped
• 2 Carrots sliced thick
• 1/2 Cup Celery
• 1 1/2 Cups Crushed Tomatoes
• Olive Oil
• Sea Salt
• Crushed Black Pepper
Directions:
Add a drizzle of olive oils to your crock pot, hit the sauté button on medium. Once your oil is nice and hot add your short ribs, just a few at a time so that they can all brown evenly on each side.
Once your ribs are all browned add them back to the Insta-pot. Add your beef broth and wine and some pepper. Close your top and set to pressure cook on high for one hour.
When your timer goes off open your pot and add the rest of your ingredients give it a good stir close the lid and pressure cook again on high for another 30 minutes and that’s it!!
For the gravy strain the juices into a pot and let it come to a medium boil add about 2 tsp of Xantham Gum or Arrowroot Powder to thicken it up. You might need a little more salt and pepper as well. Make sure to use a whisk and keep whisking until your gravy is nice and thick, set aside.
You can make some grits or cauliflower mash as a side for that gravy!!!
