Crunchy Salmon Cakes



Ingredients:

I can salmon (I used Wild Plant)

1/4 cup mayo

3/4 cup pork rinds (I used Southern Small Batch)

1/4 teaspoon chile lime seasoning (Trader Joes)

Crushed Black Pepper

1 egg (beaten)

2 teaspoons olive oil or bacon fat



Directions:


In a small bowl add the salmon, mayo, 1/4 cup pork rinds, chile lime seasoning & crushed black pepper.


When everything is mixed well you can start to form your patties, one can makes two patties.


In a small bowl add your egg and whisk.


In a small bowl add the 1/2 cup pork rinds (for breading).


You will then egg each patty and coat it in the pork rind breading and set aside.


Heat a small skillet with olive oil, once hot add your patties.


Fry on each side for 5/6 minutes.
