Im not sure about you but I need things on hand to get me through the day. Everyone always talks about batch cooking and I can say it's so important to do!
I made 2 batches of these chicken tenders to have in the fridge all week for lunches and thank god I do because I have a 17 year old boy that eats like 3 grown men! LOL
Here's what you need!
Ingredients:
2/3 lbs chicken tenders
2 eggs, beaten
2 cups pork rinds
1/2 teaspoon oregano
1/2 teaspoon crushed black pepper
1/2 teaspoon garlic powder
1 1/2 cups coconut oil
Directions:
Start by heating up your oil in a large skillet, I would set your heat at medium/high.
Get two dishes, one you will add your eggs and the other you will add your pork rinds.
Add all your seasonings to your egg wash.
Now dip your tenders in the egg wash and than in the pork rinds.. make sure you coat them well in both!
You can start frying!
Add your tenders to the oil and just keep turning them so they don't get too dark, your going to want to have them cooking in oil for about 15 minutes!
You can put them on top of your salad or with a side veggie! Whatever you want!
