Ingredients:
• 3 Cups Lentils
• 1 container Chicken Broth
• 2 Ham Hocks
• 3 Beef Short Ribs
• 1 large onion
• 2 Tbsp minced garlic
• 2 Bay Leaves
• 1 Tsp Cumin
• 1 Tsp Turmeric
• 1 Tsp Garlic Powder
• 1 Tsp Onion Powder
• 1 Tsp Paprika
• 1 Tsp Salt
• 1 Tsp Pepper
• 1 Can Unsweetened Coconut Milk
• 1/4 Cup Parsley
• 1 Tbsp Soy Sauce
• 3/4 Cup Mushrooms thinly sliced
• Olive Oil
Directions:
You will start by heating up your Insta pot. Press the sauté button custom on medium for 20 minutes.
Once your Insta pot is hot drizzle your olive oil on the bottom. Once your olive oil is hot and your meat and brown on all sides. I started with my ham hocks first once they were done I put in my short ribs once brown remove and set aside.
While your meat is browning do you want to washer lentils and set them aside. Chop up your mushrooms nice and thin. Chop up your parsley. Wash your potatoes and cut them in half.
Now add your onion and seasonings. Give it a good stir add and 3 cups of chicken broth and about 3/4 of the can of coconut milk. Give it another stir to incorporate all your flavors and now add your lentils. Give it another good mix to incorporate.
Now you can add back all of your meat. You’re going to close the lid and press pressure cook custom on high for one hour and 30 minutes.
Once your timer is done you will release the pressure of the Insta pot. Open it up and add the rest of your chicken broth, mushrooms, soy sauce, potatoes and the rest of your coconut milk and parsley.
Give it a good stir and set your Insta pot to custom for 10 minutes on medium.
Once it’s done pull out your meat and set aside. You are going to want to remove half of the lentils from your Insta pot. You want the soup creamy but you want a little texture at the same time. If you don’t want texture you can leave all of the beans it’s up to you. Now use your immersion blender for about 3/5 minutes or until creamy.
Now it’s time to shred your meat. Once your meat is done you can add back your lentils that you removed back to the Insta pot and your meat and give it a good stir and you’re ready to serve!
Toppings: Onions, Avocado, Rice, Miracle Rice Noodles, Limes, Hot Sauce
I topped mine with onions, lime juice and avocado!! I also made a pot of rice because the kids love to have it with some white rice.
