This is a super easy soup, you don't need these exact sausages you can get any chicken sausages you like..they have cilantro garlic, spinach feta or anything else you like.
1 pack kale chicken sausage. open casing and roll into small meatballs
1/2 white onion, chopped
6 garlic cloves, minced
2 bay leaves
1 small pack beef neck bones
1 tbsp olive oil
2 cups shredded kale
1 small carrot, sliced thin (this is optional)
6 cups chicken stock
1 tsp salt
1 tsp pepper
1/2 cup low carb pasta (optional)
Open up your pack of sausage and roll into small meatballs and set aside.
In a medium large pot add your olive oil, once the oil is hot add your onions and garlic. Once they are translucent add you salt, bay leaves and beef bones.
Once your beef bones are browned add your chicken broth, once your broth is nice and hot and bubbly add your kale and carrots and cook for 10 minutes on medium heat.
Remove your beef bones and add your meatballs, cook them for another 10/15 minutes.
You can also add in some low carb pasta if you would like add that pasta with the meatballs so that it cooks properly.
Your ready to serve!!
